Ingredients

  • 3 lbs. chicken
  • 1/3 c. extra virgin olive oil
  • 4 tbsp. butter, melted
  • 1/4 c. lemon juice
  • 2 cloves garlic, crushed
  • 1 tbsp. oregano
  • Salt and pepper
  • 2 lg. potatoes, peeled and sliced

Directions

  1. In large baking pan, place chicken. Mix together other ingredients and pour over chicken. Cover with foil and chill overnight. Bake uncovered at 425 degrees till browned. Turn pcs and baste. Add in potatoes. Cover with foil and bake at 325 degrees for 1 to 1 1/2 hrs. Serves 4 to 6.
