Ingredients

  • 1/3 lb parsnips peeled, grated (abt 1 c.)
  • 1/3 lb carrots peeled, grated (abt 1 c.)
  • 1 x orange juiced
  • 1/2 x lime Juiced
  • 1/2 tsp granulated sugar
  • 1/4 tsp salt
  • 1/4 tsp freshly-grnd black pepper

Directions

  1. Toss all ingredients in a bowl till thoroughly mixed, cover, and place in the refrigerator for at least 1 hour before serving.
  2. This recipe yields 2 servings.
  3. Comments: Although parsnips are not which easy to grate, they work well with carrots in a simple salad. Be sure to let the dressed salad sit in the refrigerator for at least an hour before serving to allow the flavors to blend. You can double this recipe to serve 4.
