Grandma O's Stuffed Cabbage

Ingredients

  • 1 sm. head cabbage
  • 1 pound grnd beef
  • 2 med. onions, finely minced
  • 1 (15 ounce.) can tomato sauce, divided
  • 1/2 c. cooked rice
  • Salt and pepper to taste
  • 2 tbsp. brown sugar, packed

Directions

  1. Cut core from cabbage and scald, either in a large pot of boiling water or possibly in the microwave on HIGH for 4 to 5 min. Remove ten leaves, and cut out hard center rib.
  2. Crumble grnd beef into a medium bowl. Add in onions, half the tomato sauce, rice, and seasonings; mix. To stuff cabbage, place beef-rice filling in cabbage leaf; roll up folding edges in.
  3. Arrange seam side down in a baking dish. Blend remaining tomato sauce with brown sugar and vinegar. Pour over rolls. Cover and cook in standard oven for about 1 hour or possibly in the microwave on MEDIUM 28-30 min. Let stand covered for 5 min before serving. Yield 4 servings.
