Glazed Potato Donuts

Ingredients

  • 1 pkg. yeast
  • 1/4 c. hot water
  • 1 c. scalded lowfat milk
  • 1/4 c. shortening
  • 1/4 c. sugar
  • 1 teaspoon salt
  • 3/4 c. mashed potato (instant)
  • 2 Large eggs
  • 5 or possibly 6 c. flour

Directions

  1. Dissolve yeast in hot water, combine lowfat milk, shortening, sugar and salt and heat. Cold till lukewarm and add in yeast, potato and Large eggs. Gradually add in sufficient flour to make a soft dough.
  2. Turn on floured board and knead. Place in greased bowl and cover and let rise till doubled (1 to 1 1/2 hrs). Roll to 1/2 inch and cut with donut cutter. Cover and let rise till doubled in size about 30 min. Fry in deep warm fat at 375 degrees. Drain on paper towels. Glaze or possibly roll in sugar.
