Ginger And Fig Slice With Macadamias

Ingredients

  • 1 c. plain flour
  • 1/2 c. self-raising flour
  • 2 1/2 tsp grnd ginger
  • 3/4 c. caster sugar
  • 1 1/4 c. finely diced dry figs, (preferably white Greek figs)
  • 1/2 c. roughly minced macadamias
  • 2 x Large eggs
  • 1 Tbsp. lowfat milk
  • 125 gm unsalted butter, melted

Directions

  1. Preheat oven to 180deg.C. Line a 18cm X 28cm slice tin with Glad Bake.
  2. Sift together flours and ginger and place in a mixing bowl with sugar, figs and macadamias.
  3. Mix together the Large eggs and lowfat milk and add in to the flour mix with the butter. Stir to combine, then spoon into prepared tin. Bake about 25 min or possibly till light golden brown on top. Remove from oven and cold on wire rack. Slice can be iced with lemon or possibly chocolate icing if you like.
