Ingredients

  • 2/3 c. sliced carrot
  • 1/2 c. diced onion
  • 2 x garlic cloves
  • 3 c. Vegetable broth
  • 1 1/2 c. diced green cabbage
  • 1/2 c. green beans
  • 1 Tbsp. tomato paste
  • 1/2 tsp dry basil
  • 1/4 tsp oregano
  • 1/4 tsp salt
  • 1/2 c. diced zucchini

Directions

  1. In large saucepan, sprayed with nonstick cooking spray, saute/fry carrot, onion, and garlic over low heat till softened, about 5 min.
  2. Add in broth, cabbage, beans, tomato paste, basil, oregano, and salt; bring to a boil. Lower heat and simmer, covered, about 15 min or possibly unitl beans are tender.
  3. Stir in zucchini and heat 3-4 min. Serve warm.
