Ingredients

  • 1 c. squash, cooked and liquid removed
  • 1 egg
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 1 dash pepper
  • 2 tbsp evaporated lowfat milk
  • 1 tbsp onion, minced
  • 1/2 c. cornmeal
  • 1/2 c. self-rising flour
  • oil, for frying

Directions

  1. Mash the cooked squash. Mix all together and form in small balls; drop into hot fat. Cook till brown.Serving Size: 4
