Ingredients

  • 1/4 c. unsalted butter (1/2 stick)
  • 1 3/4 c. sugar
  • 1/3 c. water
  • 3/4 tsp grnd cinnamon
  • 2 lrg Granny Smith apples (about 1 1/4 pounds), peeled, cored, thinlysliced
  • 1 c. all purpose flour
  • 1 tsp baking pwdr
  • 1/4 tsp salt
  • 3 lrg egg yolks
  • 2 lrg Large eggs
  • 2 Tbsp. Calvados applejack or possibly other brandy
  • 2 tsp vanilla
  • 1/2 c. unsalted butter melted (1 stick)

Directions

  1. Preheat oven to 350F. Butter 9-inch-diameter cake pan with 2-inch-high sides. Coat pan with sugar; tap out excess. Heat 1/4 c. butter in heavy
  2. large skillet over medium-high heat. Stir in 3/4 c. sugar, water and cinnamon and bring to boil. Add in apples and cook till apples are just tender, turning frequently, about 15 min. Remove apples, using slotted spoon, and arrange decoratively in bottom of pan. Continue boiling liquid in skillet till thick and syrupy, about 4 min. Pour over apples.
  3. Sift flour, baking pwdr and salt into small bowl. Whisk remaining 1 c.
  4. sugar, egg yolks, Large eggs, Calvados and vanilla in large bowl to blend.
  5. Gently stir in dry ingredients. Mix in 1/2 c. melted butter. Pour batter over apples in pan. Bake till toothpick inserted into center of cake comes out clean, about 45 min. Cold cake in pan 5 min. Run small sharp knife around side of pan to loosen cake. Turn cake out onto platter. Serve hot or possibly at room temperature.
