Ingredients

  • 2 Tbsp. sugar (caster)
  • 2 Tbsp. flour, plain
  • 2/3 c. lowfat milk
  • 2 x egg yolks
  • 1/2 c. sugar (caster)
  • 1/3 c. white wine
  • 8 x figs
  • 3 tsp gelatine pwdr
  • 2 Tbsp. water
  • 1/2 c. cream red food colouring

Directions

  1. Dice figs.
  2. Mix sugar and flour together in a bowl, gradually blend in egg yolks and lowfat milk, stir till smooth. Transfer to a saucepan and stir over low heat till mix boils and thickens; cold to room temp.
  3. Figs:Place sugar, wine and figs in a pan, bring to the boil, reduce heat, cover and simmer 5 min. Dissolve gelatine in water and add in to fig mix.
  4. Process till smooth with egg mix. Transfer to a bowl and mix in whipped cream and tint a light pink colour with red food colouring.
  5. Spoon into serving glasses and chill for 2-3 hrs.
  6. Serve with slices of fresh figs and whipped cream.
