Ingredients

  • 1 1/2 lb Provimi lowfat milk-fed veal loin, trimmed & sliced into 2-ounce cutlets
  • 4 med Shallots, minced fine
  • 1/4 lb Butter, softened
  • 1 Tbsp. Finely minced fresh parsley
  • 12 slc Lemon, thin Salt White pepper Clarified butter
  • 1 x Lemon, juice of

Directions

  1. Lb. cutlets with flat side of meat mallet till uniformly thin. Season with salt & pepper. Saute/fry in clarified butter, & hold on warm plate. Using same pan at low heat, add in softened-not melted-butter, lemon juice, shallots & parsley. Add in veal & allow to simmer for 2 to 3 min over low heat.
  2. Remove veal & arrange on serving plates with slice of lemon between each cutlet. Pour remaining sauce over portions & serve.
