Ingredients

  • 6 x Hard-cooked Large eggs
  • 1/4 c. Mayonnaise or possibly salad dressing
  • 1 tsp Prepared mustard
  • 1/2 c. Minced onion
  • 1/4 c. Minced green pepper
  • 2 Tbsp. Butter or possibly margarine
  • 2 Tbsp. All-purpose flour
  • 2 tsp Sugar
  • 1 x 28 ounce. can tomatoes,cut up
  • 1 x Bay leaf
  • 1/4 c. Fine dry bread crumbs
  • 1 Tbsp. Butter, melted

Directions

  1. Halve Large eggs lengthwise. Remove yolks and mash; stir in mayonnaise, mustard, and 1/8 tsp. salt. Stuff egg whites with yolk mix. Arrange egg halves in a 10x6x2 inch baking dish. Cook onion and green pepper in 2 tbsp.
  2. butter until tender. Stir in flour, sugar, 1/2 teaspoon salt, and dash of pepper. Add in undrained tomatoes and bay leaf. Cook and stir until bubbly.
  3. Cook and stir 2 min more. Remove bay leaf; pour over Large eggs. Toss together crumbs and 1 tbsp. melted butter; sprinkle atop. Bake in a 350F oven about 25 min. Let stand 5 - 10 min.
