Ingredients

  • 3 c. cooked crab meat, flake
  • 2 x hard boiled Large eggs, minced
  • 1/4 c. lemon grass, sliced fin
  • 1/4 c. onion, minced
  • 2 Tbsp. nam-prik pao
  • 2 Tbsp. fish sauce
  • 3 Tbsp. lime juice
  • 1 Tbsp. sugar
  • 2 Tbsp. scallions, minced.
  • 2 Tbsp. coriander leaves, chop cucumber for garnish

Directions

  1. Mix all ingredients together and fill cucumber c.. To make cucumber c. - Peel and cut cucumber crosswise approximately 3 inches thick, and scoop out seeds to make c.. Mix 1/2 c. white vinegar with 1/2 c. water, 1 Tbs. salt, and 1/4 c. sugar. Add in the cucumber c. and marinate for about 1/2 hour, then drain off and throw away liquid.
