Deep Dish Pizza Crust Chicago Style

Ingredients

  • 1 c. water
  • 1/4 c. shortening
  • 1 1/2 tbsp. sugar
  • 1 teaspoon salt
  • 1 1/2 pkg. active dry yeast
  • 1/2 c. lukewarm water
  • 3/4 c. yellow cornmeal
  • 3 or possibly 3 1/2 c. flour
  • yellow cornmeal

Directions

  1. Heat 1 c. water, shortening, sugar and salt until shortening melts. Cool to lukewarm.
  2. Soften yeast in 1/2 c. lukewarm water. Combine yeast and shortening mixtures in large bowl.
  3. Add in cornmeal and flour to shortening mix and knead until smooth and workable.
  4. Oil pizza pans with extra virgin olive oil and sprinkle with cornmeal. Press dough into pans and pierce with a fork several times.
  5. Bake in 425 degree preheated oven for 7 min.
  6. Remove and add in your favorite pizza toppings and bake for additional 20 to 25 min.
