%202%20cups%20chopped%20dates%20%E2%85%93%20cup%20melted%20butter%20pinch%20salt%20%C2%BD%20tsp%20baking%20soda%20%C2%BD%20cup%20firmly%20packed%20brown%20sugar%201%C2%BD%20tsp%20vanilla%20extract%202%20cups%20flour%201%20tsp%20baking%20powder%20%C2%BD%20tsp%20ground%20nutmeg%202%20beaten%20eggs%201%20cup%20toasted%20pecans%20(or%20walnuts%20if%20you%20prefer)%20(%20I%20toast%20mine%20on%20a%20cookie%20sheet%20in%20a%20preheated%20350%20degree%20F%20oven%20for%205-7%20minutes,%20tossing%20at%20least%20once%20during%20that%20time.)%3C/p%3E%3Cp%3EDo%20not%20chop%20your%20dates%20too%20small%20or%20they%20will%20break%20up%20in%20the%20batter.%20I%20like%20to%20cut%20each%20dried%20date%20into%20only%204%20or%205%20pieces%20so%20that%20you%20can%20see%20actual%20pieces%20of%20date%20in%20the%20loaf%20when%20you%20cut%20it.%20Pour%20the%20hot%20tea%20or%20coffee%20over%20the%20chopped%20dates%20along%20with%20the%20melted%20butter,%20salt,%20baking%20soda%20and%20brown%20sugar.%20Stir%20gently%20with%20a%20rubber%20spatula%20to%20help%20dissolve%20the%20brown%20sugar.%20Set%20aside%20to%20cool%20for%2020%20minutes.%20After%20the%20date%20mixture%20has%20cooled%20stir%20in%20the%20vanilla%20extract.%20Sift%20together%20the%20flour,%20baking%20powder,%20and%20nutmeg%20and%20add%20to%20the%20date%20mixture%20along%20with%20the%202%20beaten%20eggs.%20Fold%20the%20batter%20together%20by%20hand%20using%20a%20rubber%20spatula.%20When%20the%20flour%20is%20almost%20all%20incorporated,%20add%20the%20toasted%20pecans%20during%20the%20last%20few%20folds%20of%20the%20batter.%20Preheat%20oven%20to%20350%20degrees%20F%20(325%20degrees%20F%20for%20glass%20bakeware).%20Grease%20a%20large%209x5%20loaf%20pan%20and%20line%20it%20with%20parchment%20paper.%20Spoon%20the%20batter%20into%20the%20loaf%20pan.%20You%20can%20top%20the%20loaf%20with%20a%20few%20untoasted%20pecans%20and%20additional%20pieces%20of%20chopped%20date%20if%20you%20like.%20Bake%20for%20about%20one%20hour%20until%20a%20wooden%20toothpick%20inserted%20into%20the%20middle%20of%20the%20loaf%20comes%20out%20clean.%20Baking%20times%20may%20very%20by%20oven%20and%20the%20type%20of%20pans%20used,%20so%20check%20it%205%20to%2010%20minutes%20early%20and%20allow%20extra%20time%20if%20needed.%20Let%20the%20toothpick%20test%20be%20the%20best%20judge%20of%20when%20it%20is%20done.%20Remove%20from%20oven%20and%20let%20rest%20in%20the%20pan%20for%2010%20minutes%20before%20removing%20the%20loaf%20from%20the%20pan%20and%20letting%20it%20cool%20completely%20on%20a%20wire%20rack.%20%20%20I%20have%20also%20baked%20this%20large%20loaf%20cake%20in%202%20small%20disposable%20aluminum%20loaf%20pans%20which%20worked%20quite%20well.%20The%20baking%20time%20is%20considerably%20less;%20probably%20between%2030-40%20minutes%20but%20once%20again,%20let%20the%20toothpick%20test%20be%20the%20best%20judge%20of%20when%20the%20loaf%20is%20fully%20baked.%20%203.4.3177%3C/p%3E){kind=link}
