Cucumber and Yogurt Salad Recipe

Great alternative to tzatziki.

  • 1 cucumber, peeled, seeded and chopped
  • salt
  • 2 c plain greek yogurt
  • 1 T minced garlic
  • 2 T fresh dill (I used freeze dried)
  • 1 T white wine vinegar (I actually didn't have any white wine vinegar so I used 2 teaspoons white wine and 1 teaspoon vinegar and it worked great)

Directions

  1. Place the cucumber in a colander and sprinkle with salt. Let sit for 15-20 minutes to draw out some of the moisture.
  2. Combine the yogurt, garlic, dill and vinegar into a bowl.
  3. Add the cucumber and stir. Season with salt and pepper to taste.
  4. And you're done!
