Crispy Spicy Beef Slices (Dendeng Belado)

Ingredients

  • 1 1/8 lb beef chuck
  • 1 tsp lime juice Salt to taste Vegetable oil
  • 1/4 lb red chilies
  • 16 sm shallots
  • 1 x ripe tomato

Directions

  1. Trim the beef from any fat and cut it very thin, square pcs following the meat fibers.
  2. Work the salt and lime juice into the meat and then let it dry in the warm sun till it is very dry and resembles beef jerky. It usually takes several days to dry.
  3. Slice the beef into 2 1/4- by 2 1/4-inch squares and fry in a deep fryer till brown and dry. Remove and set aside.
  4. Coarsely lb. the red chilies, shallots, salt and tomato. Fry in 1/4 c. oil till fragrant. Add in the beef and stir-fry to coat the slices and distribute the flavors.
  5. This recipe yields 6 servings.
