Ingredients

  • 8 x French style crepes
  • 1 1/2 c. cream
  • 1/2 tsp vanilla essence
  • 1 Tbsp. Brandy
  • 4 x apples, Granny Smith
  • 1 Tbsp. butter
  • 1/2 Tbsp. lemon juice
  • 1 Tbsp. apricot jam
  • 2 Tbsp. almonds, slivered
  • 1 Tbsp. icing sugar

Directions

  1. Peel, core and dice the apple 1/2 cm. Cook gently in the butter and lemon juice till tender. Stir in apricot jam and calvados, allow to cold.
  2. Whip cream till stiff. Mix in vanilla, apples and almonds.
  3. Spoon about 1-2 tblsp of apple cream onto one end of crepe and roll up. Place on a flat baking tray.
  4. Dust liberally with icing sugar and place under a warm grill 1 minute to glaze.
  5. Transfer to serving dish and serve immediately.
  6. Crepes and cream can be prepared in advance.
