Ingredients

  • 2 1/2 c. corn
  • 2 x Large eggs beaten
  • 1 can evaporated skim lowfat milk - (12 ounce)
  • 1/4 tsp nutmeg
  • 2 Tbsp. low-calorie margarine
  • 2 tsp sugar Salt to taste Freshly-grnd black pepper to taste

Directions

  1. Preheat the oven to 350 degrees.
  2. Combine all ingredients in a medium bowl and pour into a nonstick casserole dish.
  3. Bake for 45 min till the center of the pudding is set and the top is light golden.
  4. This recipe yields 6 servings.
