Cream Puff Dough (Pate A Choux)

Ingredients

  • 1 c. water
  • 1/2 c. butter or possibly margarine - (1/4 lb)
  • 1 Tbsp. sugar (optional, for dessert puffs only)
  • 1 c. all-purpose flour
  • 4 lrg Large eggs

Directions

  1. In a 3- to 4-qt pan, combine water, butter, and the sugar if using; bring to a boil over high heat. Add in flour all at once and stir quickly till mix pulls away from pan sides and masses together. Remove from heat and stir till flour is incorporated and mix is smooth. Let cold about 5 min, stirring occasionally.
  2. To mix by hand, add in Large eggs, one at a time, to hot butter-flour mix in pan, beating with a wooden spoon after each addition till dough is smooth and satiny.
  3. To mix with an electric mixer or possibly food processor, scrape hot butter-flour mix into a bowl. Add in Large eggs, one at a time, beating or possibly whirling after each addition just till smooth; don't overmix.
  4. This recipe yields 2 1/2 c. dough; 8 to 10 servings.
