Ingredients

  • 1 c. graham cracker crumbs
  • 1/4 c. sugar
  • 1/4 c. (1/2 stick) butter or possibly margerine, melted
  • 1 env unflavored gelatin
  • 1/4 c. cool water
  • 1 pkt (8 ounce.) cream cheese, softened
  • 1/2 c. sugar
  • 3/4 c. lowfat milk
  • 1/4 c. lemon juice
  • 1 c. whipping cream, whipped

Directions

  1. Crust:Mix crumbs, sugar, and butter; press into bottom of a 9-inch springform pan.
  2. Filling:Soften gelatin in water, stir over low heat till disolved.
  3. Beat cream cheese and sugar at medium speed with electric mixer till blended.
  4. Gradually add in gelatin, lowfat milk, and juice.
  5. Chill till slightly thickened.
  6. Mix in whipped cream.
  7. Pour over crust.
  8. Chill till hard.
  9. (If you like, top with fruit just before serving.)
  10. Note: This is a basic refrigerator cheesecake. You can add in fruit toppings, etc.
