Ingredients

  • 1 1/2 c. Flour
  • 1 1/2 tsp Baking pwdr
  • 1/2 tsp Salt
  • 1 tsp Cinnamon
  • 1 c. Sugar
  • 1 c. Oil
  • 2 x Large eggs
  • 1 c. Grated carrots
  • 1/2 c. Minced almonds
  • 1/2 c. Raisins
  • 2 2/3 c. Coconut
  • 1 can (16-ounce) cream cheese frosting

Directions

  1. Mix flour, baking pwdr, salt and cinnamon. Beat sugar and oil at medium speed of mixer. Stir in flour mix. Add in Large eggs, one at a time, beating well after each addition. Stir in carrots, nuts, raisins and 2/3 c. coconut. Pour into a greased 9-inch Bundt pan. Bake at 350 degrees for 35 min. Cold in pan for 15 min. Remove from pan and finish cooling on rack. Frost with frosting and cover with remaining coconut.
