Ingredients

  • 4 slc Bacon, coarsely minced
  • 3 x Green onions, minced
  • 5 x Red potatoes, medium size, unpeeled, cut into 1/2-inch cubes
  • 1/3 c. Green pepper, minced
  • 1/3 c. Celery, sliced
  • 3 x Cloves garlic, chopped
  • 1 c. Cool water
  • 1 c. Clam juice, (bottled is OK)
  • 1 tsp Salt
  • 1/2 tsp White pepper
  • 1 tsp Worcestershire sauce
  • 2 dsh Tabasco sauce
  • 19 1/2 ounce Clams, (canned) with juice
  • 2 c. Half and half, NO SUBSTITUTES

Directions

  1. Saute/fry' minced bacon till crisp. Drain off 1/2 the fat and throw away. Add in onions,
  2. potatoes, green pepper, celery and garlic to bacon and remaining bacon fat.
  3. Add in water and clam juice, salt, pepper, Worcestershire and Tabasco sauces.
  4. Cover and simmer for 15 min, or possibly till potatoes are tender. In a separate pan, heat the clams in their juice and add in to other mix, along
  5. with the half and half. Don't BOIL! Serve in heated bowls.
