%3C/p%3E%3Cp%3EI%20have%20made%20a%20number%20of%20different%20Margaret%20Fulton%20recipes%20over%20the%20years.%20%20The%20Beatles%20birthday%20cake%20is%20probably%20my%20favourite%20because%20it%20is%20so%20fun%20-%20I%20saw%20the%20recipe%20in%20an%20exhibition%20of%20Beatles%20memorabilia%20and%20scoured%20the%20Internet%20to%20find%20it.%20However,%20there%20are%20Aussie%20staples%20like%20Anzac%20biscuits%20and%20lemon%20delicious,%20as%20well%20as%20plenty%20of%20Christmas%20recipes.%3C/p%3E%3Cp%3EIn%202012,%20I%20even%20saw%20a%20musical%20called%20Margaret%20Fulton:%20Queen%20of%20Desserts,%20celebrating%20Margaret's%20life%20and%20work.%20%20There%20was%20audience%20participation%20involved%20in%20the%20form%20of%20being%20handed%20mini%20Australian%20flags%20and%20being%20required%20to%20wave%20them%20at%20the%20right%20time.%3C/p%3E%3Cp%3EI%20thought%20it%20only%20fitting%20that%20I%20celebrate%20Margaret's%20life%20on%20this%20sad%20day%20by%20baking%20one%20of%20her%20recipes%20from%20the%20original%20and%20still%20the%20best,%20The%20Margaret%20Fulton%20Cookbook.%20In%20keeping%20with%20Margaret's%20mission%20to%20make%20cooking%20accessible%20to%20all,%20I%20decided%20to%20make%20a%20very%20simple%20cake%20-%20the%20Cinnamon%20Tea%20Cake.%20%20Her%20book%20marks%20the%20recipes%20with%20dots%20in%20the%20heading%20so%20you%20know%20at%20a%20glance%20how%20complex%20or%20not%20they%20are%20to%20make,%20and%20the%20Cinnamon%20Tea%20Cake%20is%20indicated%20to%20be%20easy%20by%20a%20single%20dot.%3C/p%3E%3Cp%3EWhile%20this%20cake%20is%20simple%20to%20make,%20it%20is%20not%20at%20all%20skimpy%20on%20flavour.%20It%20is%20light%20and%20buttery,%20and%20given%20a%20spicy,%20crunchy%20boost%20with%20a%20sprinkle%20of%20cinnamon%20and%20sugar%20on%20top.%20%20Served%20fresh%20out%20of%20the%20oven%20while%20it%20is%20still%20warm,%20it%20is%20absolutely%20heavenly.%20It%20was%20very%20hard%20to%20limit%20myself%20to%20one%20slice.%3C/p%3E%3Cp%3EPreheat%20your%20oven%20to%20190%20degrees%20Celsius.%20%20Grease%20and%20line%20a%2020cm%20round%20cake%20tin.%3C/p%3E%3Cp%3EBeat%20the%20egg%20white%20until%20stiff%20peaks%20form,%20then%20beat%20in%20the%20egg%20yolk.%3C/p%3E%3Cp%3EGradually%20beat%20in%20the%20sugar.%20%20Combine%20the%20milk%20and%20vanilla%20extract%20in%20a%20cup,%20then%20slowly%20beat%20it%20into%20the%20egg%20mixture.%3C/p%3E%3Cp%3EUsing%20%20a%20rubber%20spatula,%20fold%20the%20flour%20and%20melted%20butter%20into%20the%20cake%20batter.%3C/p%3E%3Cp%3EScrape%20the%20cake%20batter%20into%20the%20prepared%20tin%20and%20bake%20for%2020-25%20minutes%20until%20cooked%20through%20and%20golden%20on%20top.%3C/p%3E%3Cp%3EMix%20the%20sugar%20and%20cinnamon%20from%20the%20topping%20ingredients%20together.%3C/p%3E%3Cp%3EImmediately%20on%20removing%20the%20cake%20from%20the%20oven,%20brush%20the%20top%20of%20the%20cake%20with%20the%20melted%20butter%20from%20the%20topping%20ingredients,%20and%20sprinkle%20over%20the%20combined%20sugar%20and%20cinnamon.%3C/p%3E%3Cp%3ETurn%20the%20cake%20onto%20a%20wire%20rack,%20right%20side%20up.%20%20Serve%20warm%20or%20cooled.%3C/p%3E){kind=link}
