Ingredients

  • 1 x Pared small cucumber seeded And minced
  • 1 can (7-ounce) corn kernels liquid removed
  • 1 x Minced tomato
  • 1 x Seeded and chopped jalapeno Pepper
  • 2 Tbsp. Minced cilantro
  • 1/8 tsp Grnd cumin
  • 2 Tbsp. Lemon juice
  • 2 x Avocados (1-lb) pared Halved and pitted
  • 1 1/2 c. Lowfat milk
  • 1 c. Chicken broth

Directions

  1. In 6 c. serving bowl place first 7 ingredients. In food processor, rpocess avocados, lowfat milk and broth till smooth. Pour into bowl. Press plastic wrap against top of soup; refrigerateat least 2 hrs. Soup will discolor upon exposure to air.
