Chorizo A La Mexicana (Mexican Sausage)

Ingredients

  • 1 lb Lean pork
  • 2 Tbsp. Chili pwdr
  • 1 tsp Oregano, handrubbed
  • 1 tsp Salt
  • 1 x Garlic clove, pressed
  • 2 Tbsp. Vinegar

Directions

  1. Grind coarsely or possibly chop pork. Add in all remaining ingredients and mix thoroughly.
  2. Let stand for several hrs. Fry without adding fat for about 30 min.
  3. If you aren't going to use immediately, pack the uncooked chorizo in a crock or possibly glass jar and keep in refrigerator. It will keep for several weeks. 3 ounce. or possibly 1/3 c. = 1 chorizo
