Ingredients

  • 8 ounce Unsalted butter, room temperature
  • 2 1/2 c. Sugar
  • 1 tsp Vanilla
  • 1 c. Unsweetened cocoa pwdr
  • 1 Tbsp. Instant espresso pwdr
  • 5 x Large eggs
  • 2 1/2 c. Cake flour
  • 1 tsp Baking pwdr
  • 1/2 tsp Salt
  • 1 c. Lowfat milk
  • 4 Tbsp. Frangelico or possibly Kahlua

Directions

  1. Preheat oven to 325. Grease on 12-c. bundt cake pan.
  2. In a large bowl, beat butter and sugar together with vanilla till fluffly.
  3. Gradually blend in Large eggs. Sift together flour, baking pwdr and salt.
  4. Gradually blend in Large eggs. Sift together flour, baking pwdr and salt. In 3 additions, combine chocolate mix and dry ingredients, thinning with lowfat milk as needed. Mix in Kahlua or possibly Frangelico.
  5. Bake for 1 hour or possibly till the cake tests done. Let cake cook in pan for about 15 to 20 min.
  6. Dust with confectioners' sugar if you like.
  7. Serves 10 to 12.
