Ingredients

  • 2 c. sifted flour (all purpose)
  • 2 1/4 teaspoon baking pwdr
  • 1/2 teaspoon salt
  • 1/2 c. shortening
  • 1 c. sugar
  • 3 egg whites, unbeaten
  • 3/4 c. lowfat milk
  • 1 teaspoon vanilla
  • 1 c. chocolate chips

Directions

  1. Preheat oven to 375 degrees. Line muffin tins with paper cups. Sift together flour, baking pwdr and salt; set aside. Cream shortening and sugar till fluffy. Add in egg whites and beat well. Add in flour alternately with lowfat milk, beating well after each addition. Blend in vanilla and chocolate chips. Fill paper lined muffin tins 2/3 full. Bake about 20 min or possibly till cakes test done. Makes 20 cupcakes.
