Chocolata Turtle Cheesecake

Ingredients

  • 2 c. vanilla wafer crumbs
  • 6 tbsp. butter, melted
  • 1 (14 ounce.) bag caramels
  • 1 (5 ounce.) can evaporated lowfat milk
  • 1 c. minced pecans
  • 2 (8 ounce.) Packages cream cheese
  • 1/2 c. sugar
  • 1 teaspoon vanilla
  • 2 Large eggs
  • 1/2 c. semi-sweet chocolate pcs, melted

Directions

  1. Combine crumbs and butter. Press onto bottom and sides of 9-inch spring form pan. Bake at 350 degrees for 10 min.
  2. In 1 1/2-qt heavy saucepan, heat caramels with lowfat milk over low heat, stirring frequently, till smooth. Pour over crust. Top with pecans.
  3. Combine cream cheese, sugar, and vanilla, mixing at medium speed of electric mixer till well blended. Add in Large eggs, one at a time, mixing well. Blend in chocolate; pour over pecans. Bake at 350 degrees for 40 min.
  4. Loosen cake from rim of pan; cold before removing rim of pan. Chill. Garnish with whipped cream and additional nuts if you like. Makes 10-12 servings.
