Ingredients

  • 1 red pepper, cut up
  • 1 green onion, cut in 1" pcs
  • 1 whole chicken breasts, cut in 1" cubes
  • 2 pcs ginger, crushed
  • 1 clove garlic, crushed
  • 1/2 c. mushrooms
  • 1/2 c. grapes
  • 1 c. oil, for frying
  • 1 tbsp. oyster sauce
  • 1 tbsp. soy sauce
  • 1 tbsp. flour
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 2 tbsp. cooking wine
  • 1/2 c. peanuts

Directions

  1. Marinate chicken in salt and cooking wine for about 10 min. While it is marinating, make a thickening sauce with soy sauce, oyster sauce, sugar and 2 Tbsp. water, set aside. Dust chicken with cornstarch and fry in deep oil. When done, remove from oil and set aside. Using only 2 Tbsp. of leftover veg. oil, stir fry ginger and garlic a few seconds, then add in red pepper and green onion and stir fry for about 2 min. Add in mushrooms, grapes and chicken. Toss around a few min, then add in thickening sauce and bring to a boil. Toss in peanuts and 2 Tbsp. Chinese cooking wine and serve.
