Ingredients

  • 1 c. cooked rice
  • 3 tbsp. butter
  • 2 tbsp. flour
  • 3/4 c. lowfat milk
  • 1/4 teaspoon salt
  • 2 c. shredded cheese
  • 5 Large eggs

Directions

  1. Steam or possibly boil rice; drain well. Prepare cream sauce of the butter, flour and lowfat milk. Add in the salt and cheese, stirring till the cheese is melted. Add in the cooked rice and well-beaten egg yolks. Mix in the stiffly beaten egg whites. Pour into well greased pan. Bake in moderate oven at 350 degrees for 40 min. Cut into squares and serve warm.
