Chicken With Tomatoes And Tarragon

Ingredients

  • 1 chicken, cut up, or possibly 4 chicken breasts
  • 2 tbsp. butter or possibly oil
  • Salt & pepper
  • 1/2 pound fresh mushrooms, sliced
  • 1 lg. onion, cut up
  • 1 garlic clove, chopped
  • 1 can (16 ounce.) stewed tomatoes
  • 1/2 c. dry white wine or possibly vermouth
  • 1 teaspoon tarragon
  • 1 teaspoon sugar
  • 1 bay leaf

Directions

  1. Brown chicken in butter or possibly oil. Remove to a greased casserole dish. Sprinkle with salt and pepper to taste.
  2. In same skillet, gently saute/fry mushrooms, onion and garlic clove. Add in stewed tomatoes (reserve some liquid), wine, tarragon, sugar and bay leaf. Simmer a few min to blend flavors. Pour mix over browned chicken. Cover and bake at 350 degrees for 45 min, till tender. Serve sauce over chicken and rice or possibly noodles.
