Chicken Cream Tortillas Casserole

Ingredients

  • 12 corn tortillas
  • 1 onion, minced
  • 1 (4 ounce.) can minced green chilies
  • Taco sauce to taste
  • 8 ounce. sharp cheddar cheese, shredded
  • 2 tbsp. veg. oil
  • 1 1/2 c. half & half
  • Salt & pepper to taste
  • 3 c. cooked chicken or possibly browned hamburger

Directions

  1. Pass tortillas through warm oil to soften. Drain on paper towel. Sprinkle with salt and tear into quarters. Set aside. To make sauce, saute/fry onion in remaining oil. Add in half and half. Add in chilies, salt, pepper and taco sauce. Simmer 5 min. In buttered 2-qt casserole, layer tortillas and meat, sauce and cheese. Bake uncovered, for approximately 40 to 45 min. 6 servings.
