Ingredients

  • 1/2 c. diced finely chicken
  • 1 1/3 c. chicken broth
  • 1/2 c. quick pearled barley
  • 2 tbsp. onion, minced
  • 2 tbsp. green pepper, minced
  • 1/2 c. celery, diced
  • 1 teaspoon dry parsley
  • 1 tbsp. butter

Directions

  1. Heat broth and butter to boiling. Place all remaining ingredients in casserole and pour broth over ingredients. Bake uncovered 1 hour at 350 degrees. Stir 1/2 way through baking time. Last 5 min of baking sprinkle 1/4 c. Parmesan cheese on top and return to oven.
