Ingredients

  • For the Sponge:
  • ½ cup whole milk, at room temperature
  • 2 ½ tsp. (1 envelope) active dry yeast
  • ¼ cup granulated sugar
  • ½ cup bread flour (or all-purpose)
  • For the dough:
  • 3 cups bread flour (or AP)
  • 1 ¼ tsp. salt
  • 4 large eggs, lightly beaten
  • ½ pound (2 sticks) butter, softened, but still cool
  • zest of one lime
  • Cherry Filling:
  • 4 oz. unsalted butter, at room temperature
  • ½ cup granulated sugar
  • 2 cups cherries, chopped
  • zest of one lime
  • Cherry Limeade Glaze:
  • 3 TBSP limeade concentrate
  • 2 TBSP cherry juice
  • 2 cups powdered sugar, sifted
