Ingredients

  • 6 c. lightly packed torn spinach
  • 2 c. grapes
  • 6 ounce Swiss cheese, cut in julienne strips
  • 6 ounce Cheddar cheese, cut in julienne strips
  • Mustard dressing (recipe follows)
  • 1/2 c. vegetable oil
  • 1/4 c. cider vinegar
  • 2 teaspoon Dijon-style mustard
  • 2 teaspoon packed brown sugar
  • 1 teaspoon seasoned salt
  • 1/4 teaspoon pepper
  • 2 T sliced green onion
  • 4 slices crumbled crisp, cooked bacon, optional

Directions

  1. Arrange spinach, grapes, and cheese on individual serving plates or possibly platter. Spoon Mustard Dressing over salad. Makes 4 servings.
  2. Put together oil, vinegar, mustard, brown sugar, salt, and pepper; mix well. Stir in green onion and bacon. Chill, covered, several hrs or possibly overnight. Mix thoroughly before serving. Makes about 1 cup.
