%20varattiyathu.%3C/p%3E%3Cp%3EChakka%20varattiyathu%20-%20Jackfruit%20halwa%20-%20Oh!%20my%20the%20word%20chakka%20varattiyathu%20brings%20in%20nostalgic%20memories%20of%20summer%20holidays%20of%20my%20childhood%20and%20this%20jackfruit%20sweet%20still%20is%20my%20favorite%20Kerala%20dessert.%3C/p%3E%3Cp%3EJackfruits%20and%20mangoes%20are%20indispensable%20during%20the%20summers%20of%20Kerala;%20my%20father's%20house%20at%20kottayam%20near%20the%20banks%20of%20meenachil%20river,%20the%20place%20I%20spent%20many%20holidays%20with%20cousins%20all%20around.%20We%20used%20to%20gang%20up%20and%20steal%20upplitta%20manga%20from%20%22thattumpuram%22%20(attic)%20and%20chakka%20varattiyathu%20was%20stored%20in%20the%20ari%20petti%20(a%20box%20used%20to%20store%20rice)%20and%20after%20all%20the%20troubles%20we%20might%20get%20a%20spoon%20or%20little%20less%20of%20the%20chakka%20varattiyathu.%20Apart%20from%20climbing%20mango%20trees%20there%20are%20champakka%20(rose%20apple)%20all%20around%20...life%20in%20the%2070s%20were%20fun,%20full%20of%20joy!%3C/p%3E%3Cp%3EIn%20the%20backyard%20of%20my%20fathers%20house%20there%20will%20be%20all%20sorts%20of%20pickles%20basking%20in%20the%20summer%20sun%20and%20there%20will%20be%20%22payu%22%20(a%20mat)%20topped%20with%20curd%20marinated%20bittergourd,%20salted%20mangoes,%20raw%20tamarind%20all%20laid%20out%20to%20dry%20in%20the%20sun%20and%20the%20best%20thing%20I%20like%20was%20the%20%22manga%20thera%22%20known%20now%20a%20days%20as%20fruit%20leather.%20Tons%20of%20mango%20pulps%20were%20spread%20on%20top%20of%20the%20mats%20and%20sundried%20and%20by%20the%20time%20summer%20is%20over%20and%20we%20are%20ready%20to%20go%20back%20to%20Trivandrum,%20I%20know%20amma%20will%20have%20packed%20some%20%22manga%20thera%22%20too....back%20home%20she%20will%20cut%20the%20mango%20fruit%20leather%20in%20small%20piece%20and%20toss%20in%20freshly%20grated%20coconut%20and%20give%20us%20as%20a%20snack.....good%20old%20days!%3C/p%3E%3Cp%3EComing%20back%20to%20chakka%20varatti,%20jacfruits%20are%20abundant%20in%20most%20backyards%20and%20so%20is%20used%20in%20various%20forms%20like%20making%20puttu%20with%20it%20or%20make%20ada%20etc.%20Large%20quantities%20of%20ripened%20jackfruits%20are%20passed%20on%20to%20a%20basked%20(which%20acts%20as%20a%20sieve)%20to%20take%20the%20pulp%20and%20then%20simmered%20in%20a%20large%20%22urili%22%20(a%20traditional%20Kerala%20utensil)%20and%20simmered%20for%20hours%20and%20hours%20until%20it%20becomes%20a%20thick%20halwa%20like%20consistency%20it%20can%20be%20stored%20for%20months%20and%20relished.%3C/p%3E%3Cp%3EWhen%20I%20got%20some%20jackfruit;%20I%20reserved%20half%20of%20it%20to%20make%20chakka%20varatti;%20just%20to%20satisfy%20my%20old%20nostalgic%20tastebuds.%20Of%20course;%20I%20need%20not%20fish%20out%20my%20old%20%22uruli%22%20since%20the%20seedless%20fruit%20weight%20just%20a%20kilo,%20my%20heavy%20bottomed%20%22cheenachatti%22%20wok%20or%20kadai%20will%20be%20just%20perfect.%3C/p%3E%3Cp%3EJaggery%20syrup%20(jaggery%20is%20boiled%20with%20some%20water%20and%20strained;%20to%20remove%20the%20impurities)%20is%20added%20according%20to%20the%20sweetness%20of%20the%20fruit.%20Since%20I%20had%20clean%20organic%20jaggery%20(sharkara)%20I%20did%20not%20have%20to%20trouble%20to%20make%20it%20into%20a%20syrup.%3C/p%3E%3Cp%3EHow%20to%20make%20chakka%20varattiyathu,%20step%20by%20step%20pictures.%3C/p%3E%3Cp%3ENote:%20I%20hope%20this%20will%20give%20you%20an%20idea%20on%20how%20to%20make%20chakkavaratti.%3C/p%3E%3Cp%3EI%20like%20to%20pulse%20the%20seedless%20fruit%20in%20my%20mixie%20and%20then%20pop%20in%20the%20kadai%20(heavy%20bottomed).%3C/p%3E%3Cp%3EOnce%20it%20starts%20to%20boil,%20add%20in%20the%20jaggery%20syrup%20(I%20used%20cleaned%20ones%20so%20I%20did%20not%20have%20to%20trouble%20myself%20to%20make%20into%20a%20syrup).%3C/p%3E%3Cp%3EWith%20the%20flame%20on%20medium%20to%20low;%20keep%20on%20simmering%20and%20stirring%20it.%20After%20about%20half%20an%20hour;%20the%20color%20started%20changing.%20I%20also%20added%20ghee%20and%20dry%20ginger%20powder%20(chukku%20podi).%3C/p%3E%3Cp%3EAfter%20about%201%20hour%20it%20actually%20started%20to%20roll%20into%20a%20ball.%20Allow%20it%20to%20cook%20down%20and%20store%20in%20a%20dry%20jar.%20This%20will%20keep%20good%20for%20months.%3C/p%3E%3Cp%3EOther%20Recipes:%3C/p%3E%3Cp%3EChakka%20Curry%3C/p%3E%3Cp%3EChakka%20Chips%3C/p%3E%3Cp%3EChakka%20Kuru%20Thoran%3C/p%3E%3Cp%3EChakka%20Varattiyathu%20-%20Kerala%20Recipes%3C/p%3E%3Cp%3EPREP%20TIME:%3C/p%3E%3Cp%3E10%20mins%20%20%20%20%7C%3C/p%3E%3Cp%3ECOOK%20TIME:%3C/p%3E%3Cp%3E1%20hour%20%20%20%20%7C%3C/p%3E%3Cp%3EAUTHOR::%3C/p%3E%3Cp%3ENISA%20HOMEY%3C/p%3E%3Cp%3EINGREDIENTS%3C/p%3E%3Cp%3EMETHOD:%3C/p%3E%3Cp%3EI%20lightly%20pureed%20the%20jackruit%20in%20my%20mixie;%20but%20that%20is%20entirely%20optinal.%3C/p%3E%3Cp%3EAdd%20the%20fruit%20into%20a%20large%20kadai%20or%20uruli%20on%20medium%20to%20low%20flame%20allow%20it%20cook.%20Once%20it%20starts%20to%20boil,%20ad
