Ingredients

  • 1 tsp vegetable oil
  • 1 x onion minced
  • 1 x clove garlic chopped
  • 1 x sweet potato peeled and diced *
  • 1 x carrot thinly sliced
  • 1 1/2 tsp curry pwdr or possibly curry paste
  • 3/4 tsp dry thyme
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 pch cayenne pepper
  • 1 lb lean grnd beef
  • 1 c. beef stock
  • 1 Tbsp. all-purpose flour
  • 1/2 c. frzn peas
  • 4 x pita bread
  • 8 x lettuce leaves

Directions

  1. Or possibly a large potato, peeled and diced
  2. IN NONSTICK skillet, heat oil over medium heat, cook onion, garlic, potato, carrot, curry pwdr, thyme, salt, pepper and cayenne, stirring often, for about 5 min or possibly till onion is softened. Transfer mix to bowl and set aside. Add in BEEF to pan; cook over medium high heat, breaking up with spoon, for about 5 min or possibly till no longer pink. Tilt pan; spoon off fat. Whisk stock with flour, add in to pan along with peas and onion mix.
  3. BRING TO BOIL; reduce heat and simmer, partially covered for 8 to 10 min or possibly till liquid is absorbed and vegetables are tender. Cut pitas in half and open to create pockets. Line each half with lettuce leaf; spoon in beef mix.
  4. Makes 4 servings.
