Ingredients

  • 1 lrg Cantaloupe, or possibly 2 small Lettuce leaves
  • 1 lrg Onion, thinly sliced and separated into rings
  • 1/2 lb Bacon, cooked and crumbled about 12 slices
  • 3/4 c. Vegetable oil
  • 1/3 c. Honey
  • 1/4 c. Red wine vinegar
  • 2 Tbsp. Poppy seeds
  • 1 Tbsp. Onion, chopped
  • 1 Tbsp. Dijon mustard
  • 1 tsp Salt

Directions

  1. Peel cantaloupe and cut into bite-size pcs; arrange on lettuce leaves.
  2. Top cantaloupe with onion and crumbled bacon. Drizzle dressing over salad.
  3. Blender Poppy Seed Dressing: Combine all ingredients in container of electric blender; process on low speed for 30 seconds. Refrigeratethoroughly; stir well before serving.
