Bruschetta With Tomatoes And Kalamata Olives

Ingredients

  • 1 lrg loaf Italian Bread
  • 1 x clove garlic, chopped
  • 8 x ripe plum tomatoes, minced
  • 1/3 c. Kalamata olives, pitted and minced
  • 1/4 c. fresh parsley, minced
  • 1/4 c. extra virgin olive oil
  • 2 tsp grnd oregano Salt and pepper to taste

Directions

  1. Slice bread loaf in half lengthwise. Place bread on a baking sheet and broil for about 1 minute till lightly toasted. Combine garlic and remaining ingredients in a bowl and whisk together. Spread over toasted bread and serve immediately.
  2. Chefs Notes: Olives have some fat in them but it is supposed to be the good kind of fat.
