Broccoli Au Gratin

Ingredients

  • 1 1/2 lbs. fresh broccoli
  • 3/4 teaspoon salt
  • 3 tbsp. butter
  • 3 tbsp. flour
  • 1 1/2 c. lowfat milk
  • 3/4 c. grated Cheddar cheese
  • Bread crumbs
  • Paprika

Directions

  1. Wash broccoli; dry with absorbent paper. Trim stalks and split. In a pot cook broccoli in salt water, covered for 15 min, till tender. Drain. Place in a greased casserole.
  2. In a pot combine butter and flour thoroughly. Add in lowfat milk gradually, stirring vigorously. Bring mix to a boil, continue stirring. Reduce heat. Sprinkle with remaining salt. Cook for 1 minute longer.
  3. Add in cheese; cook till cheese is melted. Pour over casserole. Top with crumbs. Bake for 25-30 min. Garnish with paprika. Serves 6.
