Ingredients

  • 8 slc Turkey bacon
  • 1 med Onion, minced
  • 1 med Red pepper, minced
  • 2 c. Egg substitute
  • 8 x Flour tortillas, heated per package directions
  • 1 c. Reduced-fat Monterey Jack Cheese Fat-free lowfat sour cream Salsa Shredded lettuce Diced tomato

Directions

  1. Cook bacon in large non-stick frying pan; drain and crumble. In same pan, cook onion and pepper till tender, about 5 min. Remove and set aside.
  2. Cook Large eggs over medium heat without stirring till Large eggs begin to set.
  3. Continue to stir gently and allow to set till cooked. Add in bacon and vegetables to Large eggs. Spoon mix onto tortillas; top with cheese. Fold or possibly roll tortillas. Serve with toppings, if you like.
  4. Makes 8 servings.
