Blueberry Pineapple Pie

Ingredients

  • 1 pound can blueberries
  • 1 c. fresh or possibly frzn blueberries
  • 1 (20 ounce.) can crushed pineapple
  • 1 (8 ounce.) pkg. cream cheese, softened
  • 3 tbsp. sugar
  • 1 tbsp. lowfat milk
  • 1/2 teaspoon vanilla
  • 1 baked 9 inch pastry shell
  • 1/4 c. sugar
  • 2 tbsp. cornstarch
  • 1/4 teaspoon salt
  • 1 teaspoon lemon juice
  • 1 c. heavy cream, whipped

Directions

  1. Drain fruits, reserving 1 1/2 c. syrup. Blend cream cheese, 3 tbsp. sugar, lowfat milk and vanilla. Add in crushed pineapple, reserving 3 Tbsp. for topping. Spread cream cheese mix over bottom of pastry shell and chill. Blend 1/4 c. sugar, cornstarch and salt and add in to reserved syrups and blueberries. Cook and stir till thickened. Add in lemon juice and cold. Pour over cream cheese layer and chill. Top with whipped cream and reserved pineapple.
