Ingredients

  • 1/4 c. butter
  • 1 c. sugar
  • 1 egg, separated
  • 1 c. lowfat milk
  • 1/2 tsp vanilla
  • 2 c. flour
  • 1 tsp baking pwdr
  • 1 pint blueberries

Directions

  1. Beat the butter and sugar till creamy. Add in the beaten egg yolk. Add in the lowfat milk, alternately with the sifted flour and baking pwdr. Stir in the vanilla, then the blueberries.Last of all, gently mix in the whites beaten to a stiff froth.
  2. Bake in a greased and lightly floured loaf pan in a preheated 375°F oven till cake tests done.
  3. Remove cake from pan by running a knife along edges. Spread a little butter over the top of the cake while it is still warm, and sprinkle with granulated sugar.
