Ingredients

  • 1/3 c. honey
  • 1 Tbsp. cornstarch
  • 1/4 c. sugar
  • 1 Tbsp. lemon juice
  • 2 c. frzn or possibly fresh blueberries
  • 1/2 c. lowfat milk
  • 1 c. flour
  • 1 Tbsp. honey
  • 1 2/3 tsp baking pwdr
  • 1/2 tsp salt
  • 3 Tbsp. shortening
  • 3/4 c. water

Directions

  1. Mix sugar and cornstarch in a saucepan. Stir in water, 1/3 c. honey and lemon juice. Bring to boil, stirring constantly till mix thickens.
  2. Add in fruit. Pour into 9x9-inch baking dish. Make biscuit topping by combining flour, 1 Tbsp. honey, baking pwdr, and salt in a bowl. Cut in shortening and add in lowfat milk. Mix till dough forms a ball. Drop by spoonfuls over fruit mix. Bake 25-30 min at 400 degrees. Serve hot.
