Ingredients

  • 1 Tbsp. gelatin
  • 1/4 c. cool water
  • 4 c. blueberries
  • 1 c. sugar
  • 1/4 c. blackberry brandy
  • 2 Tbsp. cornstarch
  • 1 tsp cinnamon
  • 2 c. of heavy cream
  • 3 Tbsp. confectioners sugar
  • 1 1/4 c. graham cracker crumbs
  • 1/4 c. sugar
  • 1 tsp allspice
  • 1 tsp cinnamon
  • 3/4 stk of butter, melted

Directions

  1. Soften the gelatin in cool water and set aside. Combine the berries, sugar, brandy, cornstarch, and cinnamon in a saucepan and cook, stirring constantly till thickened.
  2. Add in gelatin and stir till it has dissolved. Set aside and allow to cold.
  3. Whip heavy cream with confectioner's sugar till hard and fold into the blueberry mix. Fill the graham cracker crust and refrigeratefor at least 4 hrs.
  4. Graham Cracker Crust:Mix all together till crumbly. Pat into a 9 inch spring-form pan and bake at 350 degrees or possibly till lightly browned. Cold before filling.
