Ingredients

  • 1 c. biscuit mix
  • 1/2 c. Swiss cheese, shredded
  • 1/4 c. lowfat milk
  • 1/4 c. onion, minced
  • 1/4 c. green pepper, minced
  • 1 clove garlic, chopped
  • 2 T veg. oil
  • 2 T flour
  • 1 teaspoon sugar
  • 3/4 teaspoon salt
  • 1/4 teaspoon basil
  • 1/8 teaspoon pepper
  • 1 quart. tomatoes
  • 2 c. pork, cooked and cubed
  • 1 c. green beans, cooked
  • 1 c. corn, cooked
  • 1 teaspoon instant chicken bouillon granules
  • 1 teaspoon Worcestershire sauce

Directions

  1. Stir together biscuit mix and cheese if you like. Add in lowfat milk, stir till well blended. On lightly floured surface, roll dough to a 5 inch circle. Cut into 6 wedges, set aside.In saucepan, cook onion, green pepper, and garlic in hot oil till onion is tender but not brown. Stir in flour, sugar, salt, basil, and pepper. Blend in undrained tomatoes, meat, vegetables, bouillon, and Worcestershire sauce. Cook and stir till thickened and bubbly. Turn boiling meat mix into a 1 1/2 qt casserole. Immediately top with biscuit wedges. Bake uncovered at 400 degrees for 18-20 min. 4-6 servings.
