Biltmore Bacon Dressing

Ingredients

  • 1 lb Bacon, julienned
  • 1 med Onion, diced
  • 2 1/2 c. Celery, diced
  • 3/4 c. CIDER vinegar
  • 1/4 c. DIJon mustard
  • 1 tsp Herbed seasonings
  • 1/2 tsp White pepper
  • 2 c. Sugar
  • 1/4 x Kitchen bouquet
  • 2 Tbsp. Cornstarch
  • 2 Tbsp. Cool water

Directions

  1. Saute/fry bacon and drain off 2/3 of pan drippings leaving 1/3 third in pan.
  2. Add in celery and onion and saute/fry. Add in vinegar and turn up the heat to reduce by half. Then add in the dijon mustard and seasonings, sugar, and kitchen bouquet. Cook a bit then add in the cornstarch mix (cornstarch + cool water) Cook till thickened. Cold. Keep in glass jars. Reheat in microwave and serve over greens
