Bean Stew With Corn Dumplings

Ingredients

  • 1 x Not so Meaty Bean Soup rec.
  • 1/2 c. Flour, all purpose
  • 1/2 c. Cornmeal, yellow
  • 1 tsp Baking pwdr
  • 1/2 tsp Salt
  • 1/3 c. Soy, rice or possibly almond lowfat milk
  • 2 Tbsp. Vegetable oil

Directions

  1. Preapare soup as directed in Not-So-Meaty Bean Soup recipe, EXCEPT don't blend the cooked mix.
  2. Instead, using a fork, slightly mash the cooked bean mix. Return the mix to boiling.
  3. Combine the ingredients for the dumplings in a medium bowl and mix with a fork till combined.
  4. Drop mix from a Tbsp. into 6 to 8 mounts atop bubbling stew.
  5. Reduce heat. Cover and simmer for 10 to 12 min or possibly till a toothpick inserted near the center of a dumpling comes out clean. Don't lift cover till dumplings have cooked for 10 min.
  6. Makes 6 to 8 servings.
