Ingredients

  • 1 1/2 c. sliced onion - (6 ounce) sauteed
  • 12 ounce sweet Italian sausage casings removed, minced and cooked - (abt 2 1/2 c.)
  • 2 Tbsp. Cajun spice mix
  • 2 Tbsp. Tabasco brand Pepper Sauce
  • 12 x Large eggs beaten - (24 ounce)
  • 1 c. grated Cheddar cheese - (6 ounce)
  • 12 x biscuits

Directions

  1. Saute/fry the onions, sausage, Cajun spice mix, and Tabasco brand Pepper Sauce. Hold hot.
  2. For each serving, ladle 2 ounces of the egg into a nonstick omelette pan and cook the egg omelette style till it sets.
  3. Top the omelette with 1 1/2 ounces of the onion and sausage mix and 1/2 oz of the cheddar cheese. Fold omelette in half, and then into quarters. Place on a biscuit.
  4. This recipe yields 12 servings.
