Ingredients

  • 2 lb Lean pork (shoulder, butt or possibly trimmings)
  • 1/2 lb Pork fatback
  • 3 tsp Kosher salt
  • 1 1/2 tsp Freshly-grnd black pepper
  • 1 1/2 tsp Dry sage crumbled fine
  • 1/2 tsp Cayenne pepper
  • 1 tsp Sugar
  • 1/4 c. Water

Directions

  1. Coarsely grind the pork meat and fatback together into a large bowl. Add in the salt, black pepper, dry sage, cayenne, sugar and water and quickly but thoroughly mix to combine. In a warm skillet fry a Tbsp. of the sausage till done, taste and adjust seasoning if necessary. Shape sausage into patties. In a skillet fry patties till browned on both sides and no longer pink in the center. Serve warm.
  2. This recipe yields 2 1/2 pounds; about 15 patties.
